COLORFUL SUMMER CAKE WITH BUTTERCREAM FRUIT
Looking for a cake that feels like summer? This bright and colorful buttercream cake is full of playful piped details, from strawberries and watermelon to pineapple, citrus, cherries, and bananas.
And while the finished cake looks detailed, you don’t need complicated tools or fondant to recreate it. With just two simple piping tips, colorful buttercream, and a little creativity, you can pipe an entire fruit-inspired design right onto your cake.

- Your favorite cake, stacked and ready to decorate
- Prepared vanilla or lemon buttercream
- Cake turntable

A Little Color Tip
When coloring buttercream, start with a small amount of gel and gradually add more until you reach the shade you want. Remember that buttercream can deepen in color as it sits, so it’s often best to mix your colors a little lighter than your final desired shade.
For especially vibrant colors, allow the buttercream to sit overnight before deciding whether it needs more coloring. You can also use an immersion blender to help intensify the color.
Directions
Prepare the Cake Base
- Stack and fill your cake layers with your favorite buttercream if you haven’t already.
- Apply a crumb coat to the entire cake, then chill until firm. You can also chill the cake overnight.
- Once chilled, apply your final layer of buttercream. For this design, we used Neon Blue to create the base.
- Smooth the sides and top as evenly as possible—but don’t worry if the surface isn’t absolutely perfect. The piped fruit will cover much of the cake and become the star of the design!
Plan Your Buttercream Fruit
Before piping directly onto the cake, decide where you want each fruit to go.
Use a scribe or toothpick to lightly sketch the basic shapes onto the buttercream. This makes it much easier to fill each shape with piped stars and details later.
For this cake, we created:
- Strawberries
- Watermelon slices
- Pineapple
- Orange slices
- Cherries
- Bananas
You can follow the same arrangement or create your own fruit pattern.
Strawberries
Using a small open-star tip and Super Red buttercream, pipe small stars in a rounded triangle shape to form the body of the strawberry.
Add a few small Leaf Green details at the top for the leaves, then finish with tiny yellow sprinkles or dots of Lemon Yellow buttercream to create the seeds.
Watermelon
Using Rose Pink, white, and Leaf Green buttercream, pipe a curved watermelon wedge.
Fill the center with Rose Pink stars, then create a thin white section along the rounded edge for the inner rind. Finish with Leaf Green buttercream along the outside.
Add tiny dots of black buttercream or small black sprinkles for the watermelon seeds.
Pineapple
Using Lemon Yellow buttercream and your small star tip, pipe an oval pineapple shape.
Add several Leaf Green piped leaves at the top to give it that instantly recognizable pineapple look.
Bananas
Use Lemon Yellow buttercream to pipe a long, gently curved banana shape.
You don’t need too much detail here—the bright yellow color and curved silhouette will do most of the work.
Orange Slices
Start by piping a curved or wedge-shaped outline with white buttercream.
Fill the inside with sections of lighter orange buttercream to create the citrus segments, leaving thin white lines between each section. Finish the rounded outside edge with Sunset Orange buttercream to create the rind.
Cherries
Cherries are one of the easiest fruits to add because they only need a few details.
Pipe small round cherry shapes with Super Red buttercream, then add thin, slightly curved Leaf Green stems.
You can pipe cherries individually or create them in pairs.
Decorating the Top
- Using a large star tip, pipe colorful buttercream swirls around the top of the cake. We used Rose Pink and Sunset Orange, but this is another easy place to customize the design with your favorite colors.
- Finish with fresh cherries with stems for an extra pop of color and a playful summer touch.
Tips for Piping Buttercream Fruit
Keep Your Buttercream the Right Consistency
If your buttercream is too soft, your piped stars may lose their shape.
If it’s too stiff, the buttercream may be difficult to pipe, create rough or broken edges, or have trouble sticking to the cake.
Aim for a consistency that holds a defined shape while still piping smoothly.
Chill When Needed
If your cake or buttercream starts becoming too soft while you decorate, place the cake in the refrigerator for a few minutes.
You can also briefly chill your piping bags if the buttercream becomes too warm or difficult to control.
Don’t Overthink It. Let Yourself Be Creative!
Your buttercream fruit doesn’t need to look exactly like real fruit. Focus on the basic shape, color, and a few recognizable details:
- Strawberry = red + green leaves + seeds
- Watermelon = pink + white and green rind + seeds
- Pineapple = yellow + green leaves
- Cherry = red + green stem
- Orange = light orange segments + white details + darker orange rind
Once you break each fruit down into simple shapes, the whole design becomes much easier.
Make It Your Own
One of the best parts of this cake is how easy it is to customize.
Once you know the basic piping technique, try adding peaches, blueberries, raspberries, limes, apples, or whatever fruits inspire you. You could even create an all-citrus version or choose fruits and colors that match a specific celebration.
