Creating the Perfect Royal Icing Base

Because natural pinks are especially sensitive to their foundation, starting with a stable, neutral royal icing base is essential. A clean base helps colors stay true and develop evenly.


For best results:

  • Use clear or colorless extracts whenever possible

  • Keep icing at a stiff consistency before coloring

  • Add color gradually and allow time for development


For the most predictable outcome, we recommend using Chefmaster Royal Icing Mix or the scratch recipe below.

 

Ingredients:

2 Lbs. Powdered Sugar

¾ Cup Warm Water

5 Tbsp Chefmaster Deluxe Meringue Powder

1 Tbsp Clear Vanilla Extract (regular vanilla can be used)

2 Tbsp Corn Syrup


Preparation:

  1. In a stand mixer fitted with a whisk attachment, combine warm water and meringue powder. Whisk on medium speed until foamy and bubbly.

  2. Add vanilla and mix until incorporated.
    Tip: If all icing will be pink, you may add 1 to 2 drops of Chefmaster Natural Pink at this stage to encourage more even coloring later.

  3. Slowly add powdered sugar. Start on low speed, then increase to medium high until stiff peaks form.

  4. Add corn syrup and mix for one additional minute until smooth and fluffy.

  5. Finished icing should be thick, glossy, and hold stiff peaks.

  6. Divide icing evenly into four bowls for coloring.

Natural pigments deepen as they rest, so allow your icing to sit for 12 to 24 hours before making final color adjustments. Pink shades often become richer over time, especially once they’re fully dry.
